    Our honey comes from the Strandzha Mountains near the Black Sea in Bulgaria located in the Balkans. This area is classified as a Tertiary relict ecosystem, meaning many plant species there survived the last Ice Age while most of Europe froze. Because the Black Sea kept the region warmer and humid, ancient plant species still grow naturally today, some found nowhere else in Europe. Over millions of years these plants developed strong natural antimicrobial compounds to protect themselves from insects, fungi, and bacteria, and bees concentrate those plant compounds into the honey. Bulgarian honey is one of Europe’s most biodiverse and least industrialized environments.

  • The region has a rare hybrid climate: Mediterranean + Black Sea maritime + mountain. Winters are mild, flowering seasons are long, and bees begin foraging early in spring. Sea air carries trace minerals inland and the lack of heavy industry keeps pollution very low. Bees can forage for about 6–8 months, much longer than in most of Europe, which results in a more diverse and complex raw honey.

The 10-Day Whipping Method Behind Our Creamed Honey

  • Freeze-drying the fruit

    We start with ripe fruit, for example: cherries. They are frozen and then freeze-dried, a gentle dehydration method where water is removed at very low temperatures under vacuum. Because there is no heat, the cherries keep their natural color, aroma, vitamins, and antioxidants. The fruit becomes completely dry and crisp, which is important so no extra moisture enters the honey.

  • Turning the cherries into a fine cherry powder

    The freeze-dried cherries are carefully ground into a very fine powder. This gives us concentrated cherry flavor without adding juice or water. Using powder instead of puree keeps the honey stable, prevents fermentation, and allows the fruit to mix evenly throughout the honey.

  • Blending the fruit powder with pure honey (10-day whipping process)

    The cherry powder is slowly mixed into pure honey. The honey is then gently whipped and stirred over about 10 days at controlled temperature. During this time we guide the honey’s natural crystallization so very small crystals form.

    This is what creates creamed honey — smooth, spreadable, and uniform instead of hard or grainy. No heating and no additives are used, so the honey keeps its natural enzymes and nutrients while the cherry flavor becomes evenly distributed.
