Honey-Drizzled Roasted Pumpkin Bites

Ingredients:

  • 1 small sugar pumpkin (or ~2–3 cups peeled and cubed pumpkin) 🎃

  • 2 tbsp olive oil (or melted butter for a richer flavor)

  • ½ tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • Pinch of sea salt

  • 2–3 tbsp Bees & Berry Classic honey

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Prep the pumpkin: Peel the pumpkin, remove seeds, and cut into 1-inch cubes.

  3. Season: In a large bowl, toss the pumpkin cubes with olive oil and cinnamon..

  4. Bake: Spread the pumpkin cubes in a single layer on the baking sheet. Roast for 30–35 minutes, flipping halfway through, until tender and slightly caramelized on the edges.

  5. Drizzle with honey: Remove from oven and let cool for 5 minutes. While still warm, drizzle generously with Bees & Berry Classic honey.

  6. Optional Garnish: Top with your choice of toasted pecans for crunch.

  • Serve warm as a fall side dish, or over arugula as a warm autumn salad.
